Creamy Garlic Vegan Pasta

Hi everyone! I hope you're all enjoying this bank holiday Monday - I know I am! I've been brewing up ideas for the blog, cooking (this delicious recipe) and spending time with my family. I might even watch Harry Potter later to make the most out of it. After all, bank holidays are an excuse to have a lazy day, right?

Over the years I've gotten really into cooking and it's now one of my absolute favourite things to do. There's something so exciting about coming up with new recipes and learning from others, not to mention, the whole wide world of Pinterest giving me all the inspiration I could ever need.

I've been thinking for a little while what direction I want to go with my blog, as I feel like some topics I talk about on here don't bring me as much joy as they used to. Don't get me wrong, I LOVE talking all things beauty, but I think there are so many people from the beauty industry on social media now, that I tend to compare myself to them more than I should. So I think for now, I want to stick to food, health and lifestyle topics, whilst keeping it cosy as that's what makes me happiest.

So today I'm coming at you with this super yummy, quick and easy, creamy garlic vegan pasta dish that I'm loving at the moment.

- CREAMY GARLIC VEGAN PASTA -
Serves 2 
You will need:
- 2 servings of pasta
- half an onion, diced
- olive oil 
- 3 cloves of garlic, minced
- 1 tsp paprika *optional
- 1 tsp dried / fresh chillies *optional
- 1 tbsp cornstarch
- 1 cup almond milk (or any other plant based milk)
- 8 cherry tomatoes, cut into quarters

  1. Cook pasta in a large pot of boiling water.
  2. Whilst pasta is cooking, make the sauce by adding the onion, garlic, chillies and paprika to a pan with a splash of olive oil. Stir frequently, until the onion is golden and everything is fragrant. 
  3. Stir in the cornstarch and whisk until everything is combined. Slowly pour in the almond milk, ensuring that no lumps form. Stir and then simmer the sauce for a few minutes allowing it to thicken slightly. Add more seasonings if you feel it needs more. 
  4. Cut up the cherry tomatoes into quarters then add into the pan. Spinach would also make a great addition, so you could always add that in at this point too.
  5. Once the pasta is cooked, drain and then add it straight to the sauce. Mix it all together until well combined and then serve. I like to add black pepper and a bit more chillies on top, but this is completely optional. 
This pasta makes such a delicious lunch and would be easy to take on the go. Let me know if you give this recipe a try, I'd love to hear your thoughts!

  2. This pasta recipe looks amazing! And I totally understand where you're coming from about social media and beauty. The world really has changed alot this past year alone. I think you have the right idea in mind which is to stay true to yourself and make the content that makes you happy at the end of the day.
