In the mornings, you'll probably always catch me eating porridge or smoothie bowls, but one thing I love to eat every now and then is homemade granola. I've been following my own recipe for a couple of years now and I've always loved making it, but I thought why not switch things up and try something a little different! I was recently gifted a few products from Freedom Mallows (seriously one of the best vegan marshmallow companies out there) and I knew I wanted to get creative with some of their marshmallows to create a lovely recipe that I hope you will enjoy as much as me.

S'mores Granola -
You will need:
- 2 cups rolled oats
- 1/2 cup coconut oil
- 1 tbsp chia seeds
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- large handful of Freedom Mallows vanilla chocolate covered marshmallow bites
- small handful of chopped almond halves (optional, I just like the crunch)
Method:
Pre heat the oven to 180C.
Place the rolled oats and coconut sugar in a large mixing bowl.
Mix 1 tbsp of chia seeds with 3 tsp of water in a mug and put aside. Once the chia egg has thickened, place in a saucepan with the coconut oil and vanilla on low heat until the coconut oil has completely melted.
Pour the mix into the bowl with the dry ingredients and stir until well combined. If you are adding almonds, throw them into the bowl at this point!
Line a baking tray with parchment paper and pour the granola onto the tray before finally placing in the oven.
After cooking for 10 minutes, take the granola out of the oven and mix it a little bit so that it can cook evenly and not stick together too much.
Place back in the oven for another 10 minutes until the granola is golden.
Once it's done, leave the granola to cool for around 30 minutes before adding the vanilla chocolate covered marshmallow bites, giving it another mix and placing in an airtight container.
Alternatively, you could add 1/2 tbsp of cocoa powder to the mix and use Freedom Mallows pink & white mini marshmallows instead so that the granola is chocolatey, whatever works best for you!
I love enjoying this in the mornings with an iced coffee and topping the granola with strawberries and almond milk.
The granola should keep for around a week (if you can hold yourself back from eating it all until then) and contains around 3 to 4 servings.
