'Nutella' Soft Serve Ice Cream (Easy!) | Vegan

During the summer, of course it's only natural to be craving ice cream, but if you want to cut down on processed sugars or trying to create healthier habits, it can be hard to find ice cream in supermarkets that tick all the boxes. Not to mention the higher price tag. 

Ice cream can actually be easy to make, with as little as three essential ingredients! I've been making this recipe all year round for the past few years and I don't think I'll be getting tired of it any time soon either! There's so many flavour combinations that I can't wait to share with you, so stay tuned for some classic sweet treat favourite flavours!

'Nutella' Soft Serve - 
Serves 2

You will need:

- 5 / 6 bananas, chopped and frozen
- 2 tablespoons cacao powder
- 1 tbsp Meridian cocoa and hazelnut butter* (could sub for peanut butter)
- 2 tbsp chopped hazelnuts
- 1/4 cup almond milk (or any other milk alternative)

I often keep chopped bananas in the freezer so that I have them prepped for occasions like this or when I need them for smoothies, but if you don't have any in the freezer already, chop up 5 to 6 bananas into small chunks and place them in a tub in the freezer for at least 4 hours / overnight.

Once the bananas are frozen, place them in a high speed blender along with the almond milk and cacao powder and blend until smooth and creamy, making sure there are no banana chunks.

Pour the ice cream into a loaf tin, using a spatular or spoon to spread it out evenly. 

The highlight to this ice cream is definitely the swirl of nut butter. I loved using the Meridian cocoa and hazelnut butter for even more chocolatey goodness. Simply drizzle a tablespoon of the nut butter on top of the ice cream and use a knife to swirl it around. You could definitely sub this for peanut butter which is equally just as delicious.

If you fancy a bit of crunch (highly recommended) then cut a handful of hazelnuts into tiny chunks and mix them into the ice cream, along with a few more sprinkled on top. 

Place the ice cream in the freezer for around 3 hours to allow it to become like soft serve consistency and serve up with some fresh fruit and a few pieces of your favourite chocolate or eat alone!

As you can see, this recipe is soooo easy and is the perfect way to cool down during the summer!
