No Bake Granola Bites

As much as I love spending my weekends baking sweet treats or cooking up comforting meals, I can't  say they're always the healthiest. I'm all about that treat yo' self life, but I really would like to start sharing healthier alternatives online, which don't always have to be boring! I'm definitely not going to stop baking "unhealthy" treats, but I am going to start balancing them out a bit more so that it gives you inspiration to make both!

I absolutely love it when I eat something healthy that I actually enjoy, especially when it comes to snacking as I suppose that's where I struggle the most. It's easy to reach for cereal bars and quick snacks from the cupboard, which contain a bunch of unnecessary ingredients and half the time aren't as tasty as you imagined. However, I've been thinking up some really easy, fun snack recipes that are so delicious you won't even bother with store bought snacks. I may be bigging myself up a bit here, but trust me. I recently come up with these "no bake granola bites" that only take half an hour to make, can be eaten on the go and are simply amazing. They may not look like much, but they are literally little bites of peanut butter chocolate oaty heaven. 

- NO BAKE GRANOLA BITES -

Makes: 14   Total time: 30 mins

You will need:

- 2 cups rolled oats
- 3 tbsp flax seeds
- 2 tbsp peanuts, chopped finely
- 1/4 cup flaked almonds, chopped finely
- 1/2 cup maple syrup (I used Pure Maple *gifted)
- 1/2 cup peanut butter
- 1/4 cup dark chocolate chips / dark chocolate bar, cut into tiny chunks (I used Nomo dark chocolate *gifted)

Method:

1. In a large mixing bowl, combine the oats, flax seeds, peanuts and almonds. 

2. Pour in the maple syrup and stir until everything is completely coated.

3. If you are using dark chocolate, chop it up into tiny chunks, otherwise use choc chips and throw them into the bowl along with the peanut butter.

4. Stir everything until well combined and the oats feel sticky.

5. Place the bowl into the refrigerator for at least 30 minutes before rolling the mixture into balls. I would suggest scooping out a tablespoon of mixture each time and rolling them so that they are all equal sizes.

6. If you want an even bigger treat, you could melt some dark chocolate in a saucepan and coat half of each granola bite with the chocolate and allow them to set in the refrigerator for an hour before devouring. 


See how easy they are?! This is one of the easiest recipes I've ever made, but it is equally just as delicious as the rest! I'll definitely be making these all the time as they are easy to just put into a little container and place in your bag so they're with you on the go! Not to mention, they are super filling so are the perfect healthy snack to keep you going a few hours or in-between meal times.
