You most likely have these simple ingredients in your cupboards anyway, so if you have ten minutes spare, I couldn't recommend making them enough. Although these peanut butter cups are vegan you wouldn't be able to tell any difference, they're also a massive hit with my non vegan family!
Sometimes it's also nice to not have to cook or bake your homemade snacks, so when a recipe is as simple as mixing a few ingredients together and placing them in the fridge, why would you want to miss out?!
These gorgeous little bites remind me so much of snickers with a sweet gooey peanut butter centre, a sprinkle of peanuts and a thick coating of dark chocolate. Perfection.
- VEGAN PEANUT BUTTER "SNICKERS" CUPS -
Makes: 12 Prep Time: 10 mins Ready in: 20 mins
You will need:
- 2 medium sized dark chocolate bars
- 1 tsp coconut oil
- 1/2 cup peanuts
- 2 heaped tbsp smooth peanut butter
- 2 tbsp maple syrup
- 1 tsp water
Method:
1. Break up the dark chocolate bars into small pieces and throw them in a saucepan. Place the saucepan on low heat, using a wooden spoon to stir the chocolate continuously until completely melted.
2. Place 12 cupcake cases (I used cupcake silicone moulds) on a baking tray. Pour in 2 tsp worth of the melted chocolate into each case. Use a spoon or tilt the tray to fill all the space with chocolate completely, ensuring it's even.
3. Place the baking tray in the refrigerator while you prepare the peanut butter centre.
4. In a bowl, pour in the peanut butter and maple syrup. Stir the two ingredients together until it becomes creamy. Pour in 1 tsp of water to thin out the mixture and make it even more creamy. You may need to add more depending on the thickness of your peanut butter.
5. Remove the baking tray from the fridge and use a teaspoon to place the peanut butter in the centre of the chocolate base.
6. Chop up all of the peanuts into tiny chunks. Sprinkle a tiny amount into each mould on top of the peanut butter centre.
7. Use the remaining melted chocolate to pour on top of each peanut butter cup until each one is completely covered. Use a spoon to smoothen out each one and sprinkle the remaining crushed peanuts on top.
8. Place the baking tray in the FREEZER for 20 minutes until the peanut butter cups have completely set.
9. Store them in the fridge otherwise they will melt.
These have quickly become one of my absolute favourite homemade treats to enjoy on the weekends with a cup of coffee, so hopefully you will love them as much as I do!
