Cranberry And Walnut Flapjack | Vegan

Lazy Sundays are all about spending time with family, relaxing and eating good food. I'm usually most productive over the weekends so I'm always thinking up some new recipe ideas to whip up, this weekend being cranberry and walnut flapjack. I've recently started sharing more healthy recipes on my blog, but that doesn't meal I've completely eliminated unhealthy food from my life all together. These flapjacks are in nooo way healthy, but they are pretty damn delicious. So, if you fancy treating yourself and some friends / family to something sweet this weekend, I would highly recommend trying out this recipe!

These flapjack squares are pretty chunky, so if you don't want them as thick, feel free to halve the recipe. 

- CRANBERRY & WALNUT FLAPJACK -

Makes: 9 large squares   Prep: 10 mins   Cook: 25 mins

You will need:

- 4 cups oats 
- 1 cup vegan butter
- 1 cup light brown sugar
- 4 tbsp golden syrup
- 1 cup dried cranberries
- 3/4 cup walnuts, chopped into small chunks

Method - 

1. Preheat the oven to 200C and line a deep square baking tray with parchment paper.

2. Add the butter to a saucepan and place on low heat until it has melted, stirring it continuously so it doesn't burn.

3. In a large mixing bowl, pour in the oats, light brown sugar and golden syrup. Stir everything together and pour in the melted butter. Stir everything until completely combined.

4. Chop up the walnuts into small chunks and add them into the mixing bowl along with the cranberries. Stir until combined.

5. In the pre lined baking tray, pour out the flapjack mixture. Use your hands to push the mixture into the corners and flatten it out evenly.

6. Place the flapjack in the oven for 25 minutes until the top becomes golden. Allow it to cool for at least 15 minutes before enjoying as it will crumble otherwise!

As you can see, this recipe is soo easy and calls for only 6 ingredients! Although they aren't healthy, it's nice to enjoy something like this every now and then.
