Ahh weekend baking.. my favourite! I love whipping up yummy treats for the family to enjoy over the weekends and this week I thought I'd share my favourite chocolate cookies with white chocolate chunks and cashews with you! I can't seem to find vegan friendly white chocolate chips anywhere, so chocolate chunks was the next best thing, however if you can find chocolate chips then go ahead and use those if you would prefer!
These cookies are the perfect texture if cooked right, they're perfectly soft on the inside - almost cake like! and the little bit of crunch from the white chocolate chunks and cashews is just perfect! Plus, if you decide to do the white chocolate drizzle on top as well, it's heavenly.
Since it's mothers day this weekend, why not treat your mum to a batch of these cookies? vegan or not she won't even be able to tell!
- WHITE CHOCOLATE CHUNK & CASHEW COOKIES -
Makes: 18 Prep Time: 10 mins Cook Time: 15 - 20 mins
You will need:
- 1/2 cup vegan butter
- 1 cup caster sugar
- 6 tbsp dairy free milk
- 1 tsp vanilla extract
- 2 cups plain flour
- 6 tbsp cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup white chocolate chunks (about 1 bar of white chocolate)
- 1/4 cup cashews, chopped
- 1 bar of white chocolate, for melting
Method -
1. Pre heat the oven to 200C and line 2 - 3 baking trays with parchment paper.
2. In a large mixing bowl, cream the vegan butter and sugar until it forms a fluffy-like texture.
3. To the same bowl, add the vanilla extract and dairy free milk. Stir until well combined.
4. Sieve the flour into the bowl with the wet ingredients, along with adding the baking powder, baking soda and cocoa powder. Stir everything together until completely combined.
5. Cut up a bar of white chocolate into small chunks and chop up the cashews. Fold these into the cookie mixture until well incorporated.
6. Scoop up 2 tbsp worth of cookie dough and shape into a ball, place it on the baking tray and gently squish it down a tiny bit so that it shapes into a cookie in the oven. Repeat until you form 18 cookies.
7. Place the cookies in the oven for 15 - 20 minutes, checking on them occasionally. Remove from the oven and let them cool for 20 minutes on a cooling rack. They will harden once removed from the oven, so don't worry if they don't feel completely cooked.
8. Once the cookies have cooled, you can start on the melted white chocolate. Break up one bar of vegan white chocolate into a saucepan. Use a wooden spoon to stir the white chocolate as it melts on the lowest heat, making sure that the edges don't burn.
9. Use a teaspoon to drizzle the white chocolate onto the cookies, using as much or as little as you like on each one.
10. If you want the chocolate to set faster, place the cookies in the fridge for 15 minutes and then finally enjoy them!
