Spicy Thai Peanut Noodles | Vegan

I'm a huge, hugeee fan of spicy food so am really excited to be working with one of my favourite brands - Banhoek Chilli Oil on another recipe. I have previously worked with them on a few posts, so if you fancy a bit more spice then check these out too! 


- SPICY THAI PEANUT NOODLES - 

Serves: 2   Prep Time: 5 mins   Cook Time: 10 mins

You will need:

- 100g wholewheat noodles 
- 4 tbsp soy sauce
- 1 1/2 tbsp peanut butter
- 3 tbsp maple syrup
- 1 tbsp sriracha
- 1 tsp dried chilli flakes
- 1 spring onion for garnishing
- crushed peanuts for garnish

Method:

1. Cook the noodles by following the packet instructions. They shouldn't take long to cook as mine always take just over five minutes by boiling them on the stove.

2. In a small bowl, add the peanut butter. Mix it around so that the texture is creamy as sometimes it can settle in the jar, you could use smooth peanut butter or even crunchy if you want a little bit more texture! Add the soy sauce, maple syrup and sriracha and mix to combine.

3. Add the Banhoek Chilli Oil to a large frying pan / wok and add the cooked noodles. Stir them around to coat them in the oil before pouring the spicy peanut sauce on top. Mix until the noodles are completely coated in the sauce. Sprinkle on some dried chilli flakes.

4. Once the noodles and sauce are hot, remove the noodles from the heat and serve them up into two separate bowls. Add the chopped spring onions on top along with some crushed peanuts on top!

I love how quick and easy this recipe is, only four steps and only a few ingredients, its perfect!

The sriracha is definitely essential in this recipe also as without it the sauce can taste too salty and too sweet, but the sriracha gives it the perfect balance as it is sweet, very spicy and has a kick of garlic.
