Thai green curry is one of my go to meals, its just so delicious and full of flavour. Literally, any time someone asks me what food I have in mind for dinner, my first thought is always Thai green as it's quick and easy to make, but doesn't hold back on flavour at all. It's also a great meal to make in batches if you're limited for time most evenings!
This dish often calls for meat like chicken, but of course this is a vegan friendly blog, so I always go for a meat replacement like Quorn vegan chicken pieces or tofu! You could also keep it completely vegetable based and use veggies like green beans, mange tout, broccoli, onion, carrots, peppers, theres so much to choose from! but today I'm going to show you how to make it with tofu as it's definitely one of my favourite options.
- THAI GREEN CURRY WITH TOFU -
Serves: 2 Prep Time: 5 minutes Cook Time: 10 minutes
You will need:
- 1 tbsp vegetable oil
- 1/2 block extra firm tofu, drained and pressed
- 1 bell pepper, chopped into thin slices
- 1 small onion, chopped into thin slices
- 6 small broccoli florets, optional
- 3 tbsp Thai green paste (check the label as not all are vegan friendly. I use this one or this one)
- 1/2 can full fat coconut milk
- 1/2 pack New Kenji rice
- 1/2 lime wedge
Method:
1. In a medium sized frying pan / wok, add the vegetable oil on medium heat. While the pan is heating up, cut the pressed tofu into small chunks and place them gently into the pan. Cook them for around 4 minutes, moving them about every now and then so they don't stick to the pan.
2. In the same pan, throw in the sliced onions, peppers and broccoli. Allow these to cook for a further 4 - 5 minutes before adding the Thai green paste. Mix everything around so that all of the vegetables and tofu are completely covered in the paste. Pour in the coconut milk and stir again.
3. Turn the heat down to a simmer while you prepare the rice. The great thing about New Kenji rice is that it's ready within two minutes and all you need to do is place it in the microwave! Remove the outer sleeve packaging and peel back the lid just slightly and pour in around 3 tbsp of water. Place the rice in the microwave for 2 minutes. Once cooked, remove the lid completely and use a fork to stir the rice around.
4. Now time to dish up the rice! you could of course use however much you like, but I decided that half the tub was the perfect amount for two people, you could obviously use more or less.
5. Remove the curry from the heat and dish it up on top or beside the rice on each plate. I then served mine with a squeeze of half a lime to give it a little bit more flavour and it was perfect! however this is completely optional.
You could also make this dish using Thai red curry paste, following the exact same steps, just with a different paste! So I would suggest doing this if you decide to switch things up a bit.
