These banana muffins are the softest, fluffiest muffins I have ever made, I'm truly in love.
Banana bread is such a classic and definitely a staple in this house, but to switch things up a little this week I decided to make chocolate chip banana muffins. I kept this recipe as simple as I could so it could be a staple recipe for me, and for you! I hope you love them as much as I do!
- CHOCOLATE CHIP BANANA MUFFINS -
Makes: 8 Prep Time: 10 mins Cook Time: 35 mins
You will need:
- 3 ripe bananas, mashed
- 1/3 cup coconut oil, melted
- 1/3 cup caster sugar
- 1 tsp bicarbonate soda
- 2 tbsp vanilla & macadamia nut butter (optional)
- 1 cup self-raising flour
- 1/4 cup dark chocolate chips
Method:
1. Preheat the oven to 180C and line a muffin tin with 8 cases.
2. In a stand mixer/large mixing bowl, add the mashed bananas. Melt the coconut oil in a mug in the microwave for 35 seconds then add this to the bowl with the bananas.
3. Pour in the caster sugar, bicarbonate soda and the vanilla and macadamia nut butter. Stir everything together until well combined.
4. Gradually add the self-raising flour, mixing as you go. Mix until completely combined and the mixture is relatively smooth.
5. Fold in the dark chocolate chips with a spatular/wooden spoon.
6. Scoop out the mixture into each of the cases, filling the cases until they are almost full. This mixture will make 8 muffins.
7. Place the muffin tin in the oven and cook for 35 minutes until the muffins are golden. You can poke a skewer/sharp knife through the middle of a muffin and if it comes out clean, they are done.
8. Allow the muffins to cool completely before enjoying.
