Oreos? Cookies? Oreo stuffed cookies? a match made in heaven.
I love experimenting with cookie flavours, I have so many in mind and I've already shared several with you such as my biscoff and white chocolate chunk cookies, pink marshmallow and white choc chip cookies and my soft & chewy s'mores cookies - just to name a few! I can't wait to share even more with you over time.
If you like Oreos (seriously who doesn't?) then you've got to try these indulgent stuffed cookies! they're pretty huge but seriously amazing, perfect for sharing with a friend (or keep them all to yourself, no judgement here).
- OREO STUFFED COOKIES -
Makes: 6 Prep Time: 10 mins Cook Time: 15 mins
You will need:
- 1 3/4 cups plain flour
- 1 tsp baking powder
- pinch of salt
- 1/2 cup vegan butter, softened
- 3/4 cups light brown sugar
- 1/2 cup caster sugar
- 2 vegan eggs (I use Orgran egg replacement or Free & Easy Foods egg replacement)
- 1 tsp vanilla extract
- 1/4 cups vegan milk chocolate chips
- 6 oreos
Method -
1. Preheat the oven to 200C and line two baking trays with parchment paper.
2. In a large mixing bowl/stand mixer, combine the plain flour, baking powder and salt.
3. Soften the butter in a mug in the microwave for 30 seconds, this shouldn't melt the butter completely but will be melted enough to keep the texture of the cookies right. Once microwaved, pour the butter into a medium-sized bowl. Add the light brown sugar, caster sugar, vegan eggs and vanilla extract. Mix everything together until completely combined.
4. Add the wet ingredients to the bowl of dry ingredients, once again mixing until everything is well combined. The mixture should now be a soft cookie dough texture.
5. Fold the vegan milk chocolate chips into the cookie dough.
6. Use your hands/tablespoon to scoop out the mixture and roll the dough into 6 balls. Split each dough ball in half.
7. Place an oreo onto each cookie and then place the other half of the dough on top and then roll into a ball. The oreo should now be in the centre of each cookie.
8. Place the cookies on the prepared baking trays, spacing them out as the cookies will grow quite a lot.
9. Place the cookies in the oven for 15 minutes. Once cooked, remove them from the oven and allow them to cool completely. Once they have been removed from the oven, they will still be very soft, but they will harden as they cool.
These cookies are so delicious, one of my favourite flavours to date! I absolutely love Oreos, so cutting one of these cookies in half and seeing the oreo in the middle is just pure heaven.
