Protein? Chocolate? Coffee? Muffins? four of my favourite things. Now combine them all and you have a dream come true. No seriously, these muffins are so good you have to try them.
I love adding protein powder to lots of my recipes, sweet treats in particular! my go-to is Unicorn Superfoods caramel slice protein as it has a soft caramel flavour and doesn't have a nasty aftertaste unlike lots of other vegan protein powders that I've tried in the past.
- Protein Caramel Coffee Chocolate Chunk Muffins -
Makes: 12
You will need:
- 3/4 cup vegan butter
- 1 cup unsweetened oat milk
- 1 3/4 cup self-raising flour
- 6 heaped tbsp unicorn Superfoods caramel slice protein powder
- 1/2 cup granulated sweetener
- 1/2 tsp baking powder
- 2 vegan eggs (I use Free And Easy Foods egg replacer)
- 1 tsp vanilla extract
- 2 shots of espresso
- Handful of chopped walnuts
- 1/2 cup dark chocolate, cut into chunks
Method:
1. Preheat the oven to 180C and line a muffin tin with 12 cases.
2. In a small saucepan, add the vegan butter and oat milk and place on low heat until the butter has completely melted.
3. In a large mixing bowl add the self-raising flour, caramel slice protein powder, sweetener and baking powder. Mix to combine.
4. Pour the melted butter mixture into the dry ingredients and mix until completely combined.
5. Add the vanilla extract, vegan eggs and espresso. Mix again.
6. Chop up the dark chocolate and walnuts into small pieces. Fold into the mixture, but leave a small handful of each aside.
7. Divide the muffin mixture between the 12 cases.
8. Sprinkle some of the remaining walnuts and chocolate chunks on top of each muffin.
9. Place the baking tray in the oven for 25 minutes. Poke a skewer in the middle of one of the muffins to check it’s cooked all the way through.
10. Allow the muffins to cool for at least 10 minutes before enjoying.
