If you need some mid-week meal inspiration then this red pepper and sundried tomato pasta recipe is for you! It's quick, it's easy and most of all, it's delicious. So if you have 15 minutes to spare, grab your pasta and a blender and get cooking!
All you need to do is throw some ingredients in a blender and cook some pasta, it's really that easy! You could even make this recipe in a big batch so you have some leftovers for the week to take on the go or for days when you really don't feel like cooking.
- RED PEPPER AND SUNDRIED TOMATO PASTA -
Serves: 2
You will need:
- 1 jar of Mr Organic grilled peppers
- 6 sun-dried tomatoes
- 2 garlic cloves
- 1/2 tsp onion granules
- 1/2 tsp garlic granules
- 1 tsp chilli flakes
- 1/2 tsp Italian seasonings
Method:
1. Cook your pasta and set it aside. Reserve 2 tbsp of pasta water.
2. Add all of the ingredients to a blender and blend until it forms a smooth paste. The paste may be a bit dry, so add the reserved pasta water to create a sauce.
3. Drain the pasta and add it to the pan with the sauce. Mix until combined.
4. Serve and top with some black pepper and thyme.
