I love banana bread. If you're like me and also love banana bread, then you need to try these banana pecan muffins! They taste pretty much identical to a loaf form, but are much more practical for just grabbing on the go! I also love the addition of pecans and cinnamon and nutmeg to make them a little bit more comforting.
- PECAN BANANA MUFFINS -
Makes: 9
You will need:
- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup caster sugar
- 1 tsp bicarbonate soda
- 1 1/4 cups self-raising flour
- 1/2 tbsp cinnamon
- 1 tsp nutmeg
- 1/2 cup chopped pecans
- 1/2 cup dark chocolate chips
Method -
1. Preheat the oven to 180C and line a muffin tin with 9 cases.
2. In a bowl, mash the 3 ripe bananas. Add the melted coconut oil and stir to combine.
3. Add the vanilla extract and bicarbonate soda and mix again.
4. Add the self-raising flour and cinnamon and nutmeg (adjust these to taste! I love cinnamon so I add quite a lot), mix again until everything is well combined.
5. Fold in the chopped pecans and dark chocolate chips
6. Divide the mixture between the 9 cases and bake in the oven for 30 minutes.
7. Once cooked, all the muffins to cool on a cooling rack for at least 25 minutes before serving with a spoonful of coconut yoghurt.
