I love a single-serve recipe when I want something there and then and don't have to worry about using too many ingredients. You can have this cookie ready to eat within 12 minutes and it tastes absolutely delicious.
You can use whatever protein powder you like, but my favourites are vanilla cake from Unicorn Superfoods, or I love the Tropeaka cookie dough flavour! something subtle would work best though.
You could also add dark chocolate or dairy-free milk chocolate, either a chopped-up bar or chocolate chips!
- SINGLE-SERVE CHOCOLATE CHUNK VEGAN PROTEIN COOKIE -
Serves: 1
You will need:
- 2 tsp vegan butter
- 1/2 tbsp brown sugar
- 1/2 tbsp caster sugar
- 2 tsp apple sauce
- 1/2 tsp vanilla extract
- 2 tbsp plain flour
- 1/4 tsp baking powder
- 1/4 tsp bicarbonate soda
- 1 tbsp vegan vanilla protein powder
- vegan chocolate
- 1/2 tbsp brown sugar
- 1/2 tbsp caster sugar
- 2 tsp apple sauce
- 1/2 tsp vanilla extract
- 2 tbsp plain flour
- 1/4 tsp baking powder
- 1/4 tsp bicarbonate soda
- 1 tbsp vegan vanilla protein powder
- vegan chocolate
Method:
1. Preheat the oven to 200C and line a baking tray with parchment paper.
2. In a small mixing bowl, combine the vegan butter with the brown sugar and caster sugar until it forms a paste.
3. Add the apple sauce and vanilla extract and mix again.
4. To the same bowl, add the plain flour, baking powder, bicarbonate soda and vanilla cake protein powder. Mix until it forms a cookie dough.
5. Chop up your favourite vegan chocolate and add as much or as little as you like. Fold the chocolate into the mixture.
6. Roll the cookie dough into a ball and place it on the baking tray in the oven for around 12 minutes.
7. The cookie will be very soft once removed from the oven but it will harden as it cools. Allow to cool for at least ten minutes before enjoying
