If you love no-bake snacks as much as I do, then you've got to try these no-bake white chocolate and caramel protein cups. They're vegan and dairy free and could also be made gluten-free if you use gluten-free oats!
These only take a few minutes to whip up and 20 minutes of chill time, so they're a perfect quick and easy snack.
- WHITE CHOCOLATE & CARAMEL PROTEIN OAT CUPS -
Makes: 9
You will need:
- 200g oats
- 50g vegan caramel protein powder (I love using the Unicorn Superfoods caramel slice protein powder or MyVegan speculoos protein)
- 60g maple syrup
- 1 1/2 tbsp coconut oil
- 2 tsp vanilla extract
- 50g smooth peanut butter
- 50g natural vegan yogurt
- a handful of dark chocolate chips
- 200g vegan white chocolate (I absolutely love Moo Free vegan white chocolate)
Method:
1. Add the oats and protein powder to a large bowl.
2. Pour the maple syrup, melted coconut oil, and vanilla extract into the same bowl. Stir to combine.
3. Add the peanut butter and yogurt and mix again. Fold in the chocolate chips.
4. Place 12 cupcake cases in a cupcake tin and fill 3/4 of each case with the oat mixture.
5. Melt the vegan white chocolate in a microwave-safe bowl in 35-second bursts, stirring in between until completely melted.
6. Pour the white chocolate over each of the protein cups.
7. Place the cupcake tin in the freezer for 20 minutes until the chocolate has set.
8. Store the protein cups in an airtight container in the fridge!
