This may not be your traditional rocky road recipe, but it sure is delicious! You’ve got to try it if you love white chocolate! the sweetness from the white chocolate, cranberries, and marshmallows compliments the pistachios and the saltiness and crunch from the salted pretzels so well!
If you don't like vegan white chocolate, then dairy-free "milk" chocolate would also work well!
The best thing about rocky road is that you can pretty much add whatever you like to it. I personally think these add-ins make the most perfect rocky road, but if you don't like cranberries or pistachios you can switch them out for something else like raisins and hazelnuts for example!
- WHITE CHOCOLATE PRETZEL ROCKY ROAD -
You will need:
- 600g (4 cups) vegan white chocolate
- 170g (2 cups) vegan mini marshmallows
- 65g (1/2 cup) pistachios
- 85g (1/2 cup) dried cranberries
- 90g (2 cups) salted pretzels
Method:
- Melt the white chocolate in a large bowl in the microwave in 25-second bursts, mixing in between until completely melted.
- Pour the melted chocolate into a large mixing bowl.
- Break the pretzels into smaller pieces and add them to the bowl of white chocolate.
- Throw in the mini marshmallows, pistachios, and cranberries.
- Mix until the white chocolate has coated everything well.
- Line a loaf tin with parchment paper and pour the rocky road mixture into the tin.
- Add some extra marshmallows, pistachios, and pretzels on top if you like!
- Place the loaf tin in the freezer for at least 2 hours before cutting the rocky road into small squares. You could cut these as big or as small as you like.
