This may be one of my new favourite quick and easy meals!
I added some vegan sausages, but you could use vegan chicken or tofu if preferred.
- FAJITA PASTA -
You will need:
- 80g uncooked rigatoni
- 1 tbsp olive oil
- 1/4 large onion
- 1 tsp garlic (1-2 cloves)
- 1 red pepper
- 2 vegan sausages
- 2 tsp fajita seasoning
- 50g vegan cream cheese
- Chilli flakes
- Salt & pepper
- Fresh parsley
Method:
1. Boil your pasta and save some of the pasta water once cooked.
2. Add the olive oil to a pan and add the chopped onion and garlic.
3. Add the vegan sausages and red pepper and fry on medium-low heat for around 5 minutes.
4. Add the fajita seasoning and mix to combine. Cook for 2 more minutes.
5. Add the cream cheese and around 1/4 cup of pasta water.
6. Add the pasta to the pan and mix everything together.
7. Sprinkle on some chilli flakes, salt and pepper to taste, and a small handful of fresh parsley.
