Sick of boring salads? I got you. This taco salad bowl is full of flavour!
It's so quick and easy to assemble as it only takes about 10 minutes. If you don't like some of the ingredients, you could always skip them or swap them for something else, however, I think these all work perfectly together!
- TACO SALAD BOWL -
Serves: 1
You will need:
- 1/2 tin black beans, drained
- 2 tsp taco seasoning
- 1 tsp olive oil
- handful of lettuce
- 1/4 red onion, sliced
- 4 cherry tomatoes, cut in half
- sweetcorn
- vegan cheese
- 1/2 avocado
- handful of popped crisps / tortilla chips
- 1 tbsp salsa
- small handful of fresh coriander
Method:
1. simply drain the black beans and add to a pan with 1 tsp olive oil on medium heat. Sprinkle the taco seasoning on top and mix to combine. Cook for around 3-4 minutes.
2. Build the salad bowl by adding the lettuce to the bottom.
3. Chop the tomatoes in half and slice the red onion. Add to the bowl.
4. Add the black beans along with as much sweetcorn as you like.
5. Slice the avocado and add to the bowl along with a handful of the popped crisps.
6. Finally add the vegan cheese, salsa and a sprinkle of fresh coriander.
