This salsa is full of flavour and fresh veggies! I could eat the entire bowl in one sitting it's so good (I won't, but I could...) It's actually great for sharing between 2 - 4 people!
All you need is:
- black beans (you could maybe try this with kidney beans or another type, but I personally love black beans)
- sweetcorn - for crunch and a little bit of sweetness!
- tomato - I'm not even the biggest fan of tomatoes, but I love them in this!
- red onion - because, yum.
- red bell pepper - or yellow or green! but, red is sweeter, so goes nicely in this salsa.
- lime - for a touch of sweet and sour
- coriander - you could skip this if you really don't enjoy it, but it adds a lovely flavour
- jalapenos - if you're like me and love spice, then you won't want to skip these, but if you can't handle spice very well, then maybe don't add them.
- BLACK BEAN SALSA -
You will need:
- 1 tin of black beans, drained and rinsed
- 1 small tin of sweetcorn, drained
- 1 large tomato, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- Juice of 1/2 lime
- Handful of fresh coriander
- Handful of jalapeños, optional
Method:
1. Simply add the black beans to a bowl along with the sweetcorn.
2. Dice the tomato, red onion and red bell pepper and add these to the same bowl.
3. Mix everything around.
4. Squeeze the lime juice on top.
5. Add the fresh coriander and a handful of jalapeños if you like spice.
