This is such a simple staple recipe and I can honestly say these are some of the best cookies I have ever had. If you love a chewy, yet soft cookie, then you have to try this recipe!
You can of course use chocolate chips instead of chocolate chunks and you could even use white chocolate or dark chocolate instead of milk chocolate.
I use a flax egg as my egg replacement but feel free to use aquafaba (chickpea water) as this works just as well.
- EASY VEGAN CHOCOLATE CHUNK COOKIES -
Makes 12 cookies
You will need:
- 1/2 cup vegan butter
- 3/4 cup light brown sugar
- 1/2 cup caster sugar
- 1 flax egg (or other egg replacement)
- 1 tsp vanilla extract
- 1 1/2 cups plain flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate soda
- 1/4 tsp salt
- 2 bars of vegan chocolate
Method:
1. Preheat the oven to 180C and line two baking trays with parchment paper.
2. In a large mixing bowl, combine the vegan butter with the light brown sugar and caster sugar. Mix until smooth.
3. Pour in the flax egg and vanilla and mix again.
4. Add the plain flour, baking powder, bicarbonate soda and salt to the same mixing bowl and mix until a smooth cookie dough forms.
5. Chop up the vegan chocolate into small chunks and fold them into the cookie dough.
6. Roll the cookie dough into 12 balls and space them out on the baking trays.
7. Place in the oven for 12 minutes.
8. Remove them from the oven and allow to cool completely. They will be very soft to touch at first, but they will harden as they cool.
