Pumpkin bread is my absolute favourite autumn treat. It’s so comforting with the added cinnamon and nutmeg and even more delicious with the chocolate chunks and walnuts!
I've made many pumpkin loaves over the years, but I've finally found my favourite way to make it. So, try it for yourself and let me know what you think! It's a family favourite for this time of year and every year I look forward to making it!
- VEGAN PUMPKIN LOAF -
You will need:
- 1 1/2 cups pumpkin
- 3/4 cup coconut oil
- 1 tsp vanilla
- 1 cup cup caster sugar
- 1 1/2 cups self-raising flour
- 1 tsp bicarbonate soda
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 bar vegan chocolate
- 1/3 cup walnuts
Method:
1. Preheat the oven to 180C and line a loaf tin with parchment paper.
2. In a large mixing bowl add the pumpkin purée.
3. Add the coconut oil to a mug and microwave for 35 seconds until melted.
4. Pour the melted coconut oil into the mixing bowl along with the vanilla extract. Mix to combine.
5. Add the caster sugar, self-raising flour, bicarbonate soda, nutmeg and cinnamon. Mix until smooth.
6. Chop up the chocolate bar and walnuts and fold them into the mixture.
7. Pour the mixture into the loaf tin and bake for 50 minutes or until a skewer poked through the middle comes out clean.
8. Allow to cool before slicing and enjoying!
