Made with just a few ingredients, these Biscoff crispy treats are such a delicious snack/dessert. Topped with a layer of dairy-free white chocolate and even more Biscoff, what’s not to love?
I used Good & Honest's sweet and salty popped crisps rather than Rice Krispies or cornflakes, as they have such a lovely texture and work perfectly!
- BISCOFF CRISPY TREATS -
You will need:
- 200g vegan marshmallows
- 60g vegan butter
- 180g Biscoff spread
- 2 large bags of @goodandhonest_ sweet and salty popped crisps
- 200g dairy free white chocolate chips
- 3 tbsp Biscoff
Method:
- Line a square baking tin with parchment paper and set aside.
- Place the vegan marshmallows, butter and Biscoff spread in a saucepan on low heat. Stir continuously on low heat for about 10 minutes until everything has melted. Sometimes it may take a while for the marshmallows to melt, but give it time and they will eventually!
- Pour the popped crisps into a bowl and crush them with your hands.
- Pour the marshmallow mixture on top of the popped crisps and mix until coated. You will need to act fast as the mixture will harden quickly as it cools.
- Once coated, pour the mixture into the prepared tin. Squish it down with a spoon so it’s all stuck together.
- Place the tin in the freezer for 20 minutes.
- Pour the white chocolate chips into a microwave-safe bowl and place in the microwave in 35-second bursts, stirring in between until melted.
- Once melted, remove the tin from the freezer and pour the white chocolate on top, spreading it out until it’s covered.
- Place the Biscoff spread in a microwave-safe bowl and place in the microwave for about 25 seconds until melted.
- Drizzle the Biscoff spread on top of the white chocolate layer or use a skewer/knife to create a marble effect.
- Place back in the freezer for 15 minutes before slicing into squares and enjoying!
