These muffins are the perfect festive snack! Full of festive flavours, using chocolate, mixed nuts and dried cranberries! I also added some chocolate protein powder for an extra protein boost.
- CHOCOLATE, MIXED NUT & CRANBERRY MUFFINS -
You will need:
- 200g self-raising flour
- 10g cocoa powder
- 40g vegan chocolate protein powder
- 220g caster sugar
- 1 tsp baking powder
- 120g vegan butter
- 145ml oat milk (or other dairy-free milk)
- 1 flax egg (1 tbsp flaxseeds + 3 tbsp water)
- 100g vegan chocolate
- Handful of walnuts
- Handful of pecans
- Handful of dried cranberries
Method:
1. Preheat the oven to 180C and line a muffin tin with 12 cases.
2. Add the self-raising flour, cocoa powder, protein powder, caster sugar and baking powder to a bowl and whisk until smooth.
3. Add the vegan butter to a saucepan and place on low heat until the butter has melted. Pour in the oat milk and mix to combine.
4. Pour the wet mixture into the dry ingredients along with the flax egg and mix until completely combined and smooth.
5. Chop the vegan chocolate, walnuts and pecans into small pieces and fold them into the mixture, as well as the dried cranberries.
6. Divide the mixture between the 12 cases and bake for 25 minutes.
7. Allow to cool completely before enjoying
