If you haven't tried adding grapefruit to your bakes then you are seriously missing out! This citrus works perfectly, the same as lemons and oranges in delicious cakes and other bakes.
These baked doughnuts are flavoured with grapefruit juice, as well as in the icing, resulting in a deliciously sweet and zesty dessert!
- GRAPEFRUIT BAKED DOUGHNUTS -
Makes: 8 Doughnuts
You will need:
- 3 tbsp Florida Grapefruit juice
- 1 tbsp Florida Grapefruit zest
- 1 cup plain flour
- 1 tsp baking powder
- 1/2 cup caster sugar
- 1/2 tsp salt
- 1 1/2 tbsp apple sauce
- 1 tbsp vegan butter
- 1/2 cup dairy-free milk
For the icing:
- 2 tbsp Florida Grapefruit juice
- 1/2 cup icing sugar
- Pink food colouring, optional
- 2 tbsp desiccated coconut
Method:
1. Preheat the oven to 180C and lightly grease a doughnut tin with oil.
2. In a mixing bowl, add the plain flour, baking powder, caster sugar and salt. Mix to combine.
3. Melt the butter in a mug in the microwave for 20 seconds. Once melted, pour it into the dry ingredients along with the apple sauce, Florida Grapefruit juice, Florida Grapefruit zest and dairy-free milk. Mix until completely combined.
4. Divide the mixture between the doughnut tin. This should make around 10 doughnuts.
5. Bake for 15 minutes or until golden.
6. Allow the doughnuts to cool in the tin for a couple of minutes before removing them and placing them on a cooling rack.
7. In a bowl, combine the icing sugar, Florida Grapefruit juice and a couple of drops of pink food colouring. Mix to combine.
8. Drizzle the icing on top of the doughnuts and sprinkle some desiccated coconut on top.
